One pot Thai noodles in peanut sauce

I promise, I've got a good recipe for you today. But first, this:

If you've followed us for a while, you might be thinking..."Jessica, isn't that an old picture from your epic macaroni kitchen fire of Jan. '14?" No. This is the epic kitchen fire of June '14. Only this time, I managed to burn something while steaming food. You know, steaming it with water. What exactly caught on fire is still a mystery, but dang it I managed to light my stove on fire again somehow! And like last time, for some reason I thought it was necessary to stop and take a picture.

Because I'm crazy like that. And extremely dedicated to you all, apparently.

Anyways, on to the recipe! I adapted this recipe from this one over at Apron Strings. I knew we'd love the peanut sauce, because I already make a killer Thai peanut sauce and it's a huge hit, even with the under-ten crowd. So to this recipe I added more peanut butter, some different vegetables and more of some other stuff...but still her recipe is totally worth checking out! I just kind of used what I had on hand.

One pot Thai noodles in peanut sauce recipe

2 bunches of green onions, cut into 2 inch long pieces
3 carrots, peeled and cut into sticks
1 cup of pea pods
1 can of chicken or vegetable broth
1 can coconut milk
1 cup water
2 Tbsp soy sauce
1 red pepper
2 inches of ginger, peeled and cut into big chunks (you will not be eating these!)
1 cup peanuts
1/4-1/2 cup peanut butter
1 package of rice noodles (the thick ones)
four cloves of garlic, sliced thin

for garnishing:
more peanuts (if you want)
mung bean sprouts (my favorite thing to throw on pretty much all foods)
1 bunch fresh cilantro, chopped
1/4 cup lime juice

1. Throw ingredients into pot.

2. Cover and bring pot to a boil.

3. Once boiling (don't burn your stove) reduce to a simmer.

4. Let simmer for about 10 minutes, or until rice pasta is done, and the liquid has evaporated by about half.

5. Remove your ginger chunks, because biting into one in the middle of your meal is holy crap intense. Stir in your lime juice, salt and pepper to taste, and throw your garnishes on top.

You're done! Super easy. The most time consuming part is usually chopping all those vegetables. And if you're really lazy like me (ssshhhh....) you can buy pre-chopped veggies. Then it's even easier!

Oh yeah, and I forgot to add that you should never eat this without siracha's sauce. I mean, really you shouldn't.
