Crispy burritos

These crispy, melty and cheesy burritos are a family favorite at my (Jessica's) house! We absolutely love them, and eat them every few weeks without fail. I can't claim that they're exactly "healthy" the way a lot of our recipes are, but they are crazy delicious!

See that melty cheese? The spicy beef? The crispy tortilla? Yeah, you know you want to make them...and I'm going to tell you how!

Crispy Fried Burritos

1 lb of ground beef or turkey
1 package of taco seasoning (or 2 tsp)
2 cups shredded cheese
1 can refried beans
2 avocados, chopped
1/2 onion, chopped
1 tomato, chopped
1/2 cup cilantro, chopped
1 cup sour cream
1 cup oil for cooking (we used canola)
large burrito sized tortillas 

1. Cook your beef and drain it, add the taco seasoning and the refried beans. Keep cooking until the beans are melted:

2. Pour your oil into a largish pan and heat over medium heat:

3. While you're prepping your oil, chop your veggies and grate your cheese if you haven't already:

4. Take of of your tortillas and generously spread sour cream over it:

5. Sprinkle your cheese everywhere, then spread the rest of your fillings in a line down the center of the tortilla:

6. Fold two sides of the tortilla over your fillings:

Fold the other two sides, using the the sour cream and cheese to make sure that the tortilla sticks to itself and helps glue the whole thing together:

7. Once you've gotten three or so burritos wrapped and ready to cook, place them in your hot oil with the overlapping wrapped ends down first. Check the underside, and once it gets golden brown, flip it over. Here's one burrito in each stage:

8. Once both sides are cooked, use tongs to take your burritos out of the oil and place them onto a paper towel to soak up extra oil:

9. Cut your burritos in half and bask in the cheesy goodness. Top with sour cream, salsa, or guacamole. We also love to add some spicy hot sauce if we're in the mood!

There are a million variations you could make on this! We've used ground turkey, pulled chicken and pulled pork. We've added corn, salsa, guacamole, different cheeses, or lettuce as fillings, and they were all fantastic as well. The beauty of this recipe is that you can completely customize this to your family's preferences, or even for each person in your family. My daughter always has a strictly cheese/meat/avocado version, and I have them fully loaded.
