Oatmeal "French Toast" Pancakes (Gluten-Free!)

These oatmeal "french toast" pancakes were an on-the-fly recipe that I came up with when trying to figure out a way to give the Buddies (my Dude and Hilary's son) some oatmeal at breakfast time. They looooove oatmeal. They HATE being spoon fed! I needed a way to make oatmeal into a solid form so that the buddies could eat it as a finger food. They also needed to be gluten-free because Hilary's son is gluten intolerant. I whipped up a batch of these delicious little "pancakes" and this recipe was born!

What started as an experiment in toddler food quickly became a huge hit with the rest of the family! These taste exactly like crunchy, sweet, eggy french toast! The girls and the Buddies went through two batches in one sitting, and I ate at least four while cooking them. You know the chef has to taste test a new recipe, right?

Oatmeal "French Toast" Pancakes (Gluten-Free!)

3 eggs
1 1/2 cups cooked oatmeal (instant is fine)
1 1/2 tsp cinnamon
2 Tbsp honey/agave/brown sugar
1 Tbsp milk
cooking spray

1. Whisk your eggs, milk and oatmeal together in a small bowl. Add your honey and cinnamon.

2. Heat a pan over medium-low heat and spray with cooking spray. Drop about 1/4 of batter at a time onto the pan.

3. Cook each side until golden brown, and serve! You can drizzle a little bit more honey and sprinkle a little bit more cinnamon on the top if you want, or for very young children you can serve as is (to avoid honey getting everywhere).

*makes about 10-12 small pancakes, or about 5 large ones*

This was a huge hit with the under 2 set, especially. My Dude was so happy to be able to feed himself oatmeal that he ate seven of them, and Hilary's son ate five! The girl's dubbed them "french toast" pancakes because of the amazing crunchy-on-the-outside and soft on the inside french toast consistency, and the eggy, sweet and bread-y flavor. Delish!

  4. I just made this for breakfast today and my daughter wolfed them down. She hates pancakes but loved these. I used quick oats and think I left too much water in them because it took a while for my cakes to cook. Just had to make sure to spread them thin. We'll have it for breakfast again soon.
