These snack bites were inspired by the three ingredient energy bars recipe from the Kitchn. The original recipe called for equal parts almonds, raisins and dates. I had almonds and raisins, but no dates. But not to worry! The recipe said you could use any dried fruit, so I substituted a bit and came up with this recipe:
Ingredients:
1 cup almonds (I used sliced so they would grind up easier)
1/2 cup raisins
1/2 cup dried cherries
1 cup dried figs
Then, as the original recipe instructed, I put them in my food processor and hit puree.
I ended up needing a good five minutes of processing before everything was incorporated and formed a ball.
I then scooped the ball out of the food processor, and put in onto a piece of parchment paper. I laid plastic wrap on the top and rolled it out like cookie dough. I made mine about 1/2 inch thick.
Once you have a flattened ball, you simply cut out little squares with a pizza cutter or sharp knife.
From there I simply wrapped mine in plastic wrap with a square of parchment paper behind it. They taste just like fig newtons! Next time I may leave out the raisins and cherries (you barely taste them anyways) and just do an almond and fig mixture. They were a big hit with the four year olds in my house too, because they taste so sweet and sticky. Ha! Little do they know they're also healthy!

ReplyDeleteI don’t know, I have heard for www.elcoplanet.com and I saw their site but my opinion is that www.eaglehost.info is best for hosting and reseller, I have been using www.bluehsot.com www.ixwebhosting.info but www.eaglehost.info provides best services and performances as for web hosting also for reseller web hosting such is Alpha Reseller and super Alpha Reseller, so if yu are looking for recommendation mine is www.eaglehost.info
